My mom taught us girls all to cook and bake when we were young. The blessing of that is the creativity and enjoyment of spending time in the kitchen continues to carry over into my own family! Not to mention the excitement of sharing family favourite recipes with them for the first time.
I have never made these for my family until this year, and I don’t know why, except that perhaps I forgot about the recipe! But they are a hit, as they were for us growing up. Don’t be afraid of the ingredients – these cookies are MELT-IN-YOUR-MOUTH delicious, and totally worth the compromise ;0)
Chocolate Chunk Snowballs
2 cups butter
1 cup icing sugar
3 1/2 cups flour
1/2 cup cornstarch
6 squares bittersweet chocolate (you can also use dark chocolate, or chocolate chunks), coarsely chopped
1 cup pecans, chopped (optional)
icing sugar
Preheat oven to 350 degrees F.
Beat butter and sugar until light and fluffy.
Stir in flour and cornstarch, then chocolate pieces and pecans.
Roll dough into 1 inch balls and place on an ungreased cookie sheet.
Bake for 17-20 minutes, depending on your oven, or until VERY lightly browned. You don’t want to over bake these or they will fall apart!
Dust with icing sugar and serve.
