1 1/4 cp flour
1/2 cp cornstarch
1/3 cp icing sugar
3/4 cp butter, softened
1 tsp grated lemon rind
1 tbsp lemon juice

FROSTING:
3/4 cp icing sugar
1/4 cp butter, softened
1 tsp grated lemon rind
1 tsp lemon juice

Combine all cookie ingredients. Beat at low speed, scraping often, about 2-3 minutes. Divide dough in half. Shape each into an 8×1 inch roll. Wrap in plastic wrap – refrigerate until firm (1-2 hours).

Cut each half into 1/4 inch slices. Place 2 inches apart on cookie sheets. Bake @ 350 for 8-12 minutes, or until set. Cool completely.

In small mixer bowl, combine all frosting ingredients. Beat at medium speed, scraping often, until fluffy (1-2 minutes). Frost cooled cookies.
