1 1/2 cp mint chocolate chips
3/4 tsp baking soda
1/2 cp butter, softened
1/4 cp sugar
1 egg
1 1/4 cp flour
1/2 tsp salt
1/2 cp brown sugar
1/2 tsp vanilla
1/2 cp chopped nuts
Melt 3/4 cp chips over hot water, stir til smooth. Remove from heat, cool to room temp.
In small bowl, combine flour, soda and salt. In large bowl, combine butter, sugars and vanilla. Beat til creamy. Add melted chocolate and egg. Beat well.
Gradually blend into flour mix. Stir in remaining chips and nuts. Drop onto ungreased cookie sheets.
Bake @ 375 for 8-10 minutes. Let stand 2-3 minutes, then remove.
