Saturday mornings we alternate pancakes, french toast and waffles – with waffles being the biggest favourite! Sometimes we’ll have whipped cream and fruit with them, sometimes just straight up. Friends of ours gave us some REAL maple syrup, which tastes SO much better than the fake stuff! I almost wish we had a tree we could tap just so we could make the syrup…but then I think about the length of the process, and I’m ok with buying it occasionally :D Our favourite waffle recipe has whole wheat flour in it, which I often will beef up a bit with either whole or ground flax seeds (for some extra fiber!).
My kitchen helper was Keeker again – although the boys have been asking to get in, so my next recipe will be with one of them! :D
Whole Wheat Waffles
- 1 1/2 cups flour
- 2/3 cup whole wheat flour (you can also add in or exchange with any other flour and flax seeds whole or ground)
- 2 tablespoons sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 2 1/2 cups 1% milk (add a little more liquid to stretch the batter or for less dense waffles)
- 6 tablespoons veg or coconut oil
- 2 large eggs
Place first 8 ingredients in large mixing bowl and combine until well blended and smooth.
Let batter sit for 5 minutes before using (this will give you fluffier waffles!).
Preheat waffle iron (if you like, spray with a non-stick spray, but because there is oil in these, they should be fine w/o it). Pour 3/4 cup batter in to the center of the waffle iron and spread out to the edges (any more and it will definitely overflow!).
Add in chopped apple, cinnamon, blueberries or chocolate chips when cooking on the waffle iron.
Serve with your favourite waffle toppings and enjoy!
