My cousin introduced me to this recipe for whole wheat oatmeal muffins. I shared it with you in my Make Ahead Ideas for Breakfast post, but since then, I have made a few changes to it, so I decided it deserved a post all its own.
A few notes before we being. Sprouted flour is super beneficial for your body in that instead of breaking it down as a starch, your body breaks it down as a plant. Score! Sprouted flour is expensive to buy, but it might be worthwhile using in a few recipes. You can certainly use it in this recipe, or you can use regular whole wheat flour. You can also make your own sprouted flour (if you’re not sure about which grains are good for sprouting, Nourished Kitchen has a quick guide)! (More on are grains beneficial or not)
We have started soaking all of our oats before we eat or cook with them. This helps to remove a lot of the phytic acid, aiding in better digestion and absorption of nutrients (check out what the Weston A. Price association has to say about soaking grains and removing phytic acid).
Soaking grains is SUPER easy, you just have to prepare them the night before you’re going to use them. Cover the oats in WARM WATER. Add some yogurt, kefir, ACV or vinegar as well (about 1 teaspoon per cup of oats), which helps neutralize the phytic acid. In addition, add a tablespoon of rye, spelt or buckwheat flour (for a GF option).
Rinse in the morning until the water runs clear (many people decide to not rinse the oats, however, a lot of the phytic acid is released into the water, and it might be a little sour because of the vinegar, so I always rinse them).
Whole Wheat Soaked Oatmeal Muffins
- 1 cup oatmeal
- 1 cup warm water
- 1 teaspoon vinegar/ACV, yogurt, kefir, lemon juice
- 1 tablespoon rye, spelt or buckwheat flour
Soak in a glass bowl on the counter overnight.
- 1/2 – 3/4 cup brown sugar
- 1/2 cup butter
- 2 eggs
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon vanilla
- 1 cup sprouted or regular whole wheat flour
Cream sugar and butter together. Add eggs and beat. Stir in flour, baking soda and salt. Add vanilla, and stir in oatmeal mixture.
Prepare 3/4 cup of any of the following:
- chopped peaches
- chopped strawberries
- chocolate chips
- frozen blueberries
- soaked raisins (so they don’t burn in the cooking process!)
Drop batter by the spoonful into lightly greased muffin tins. Get a cute kitchen helper to jump in at this point!
Sprinkle the add ins on top.
Bake at 375 for 20-25 minutes. Eat hot or cold and freeze the rest!
